Taco salad is one of my absolute favorites. If I have the choice between regular tacos and taco salad, you can bet your sweet butt that I’m picking the taco salad.
What you need:
1 Pound of ground meat
1 packet of taco mix
2 cups of sour cream (I prefer the light, it’s easier to work with in the salad)
1 head or bag of iceburg lettuce I also add a half bag of spinach only because I love spinach but this is absolutely optional
1 or 2 cans of sliced black olives (to your taste)
I small jar of chunky salsa
Taco sauce to your liking
1 bag of shredded cheddar or taco mix cheese
1 bag of tortillas
Brown the ground meat to the directions on the seasoning packet. Add the packet in and mix the water with it. If you use the bag of lettuce and spinach, put these in the bottom of a 13x9x2 baking dish spread evenly over the bottom. In a large bowl mix the ground meat mixture, and all other ingredients except the salsa, cheddar cheese, and tortillas. Mix ingredients together, spread on top of the layer of lettuce. Add the salsa on top of the meat mixture adding spoonfuls of sour cream on top of that. Top with shredded cheese and serve with chips. Using the salsa takes the need for taco sauce unnecessary but you are more than welcome to add some. Enjoy.
